Produced by the Castel Selva vineyard at Casale in San Gimignano, this dry white wine is produced with selected grapes of Vernaccia (95%) and Chardonnay (5%). A brief passage in 225l. oak barriques, which gives this wine a characteristic vanilla aroma, and the addition of Chardonnay has allowed to obtain an elegant and complex wine. This wine get its name from the ancient name of San Gimignano, 'Castel Selva', from the vulgarized Latin 'Castrum Silvius', the name of the town founded by the Roman Military General Silvius, who escaped from Rome during the Catilina Riots and settled the city, now known for its beautiful towers.

Aging: Although preferably drunk fresh, this wine can age 3/5 years if kept in a dark cool place.
Best at temperature: Serving temperature should be about 10°C
