The grapes of Vernaccia di San Gimignano grow in the vineyards of the property Casale located near the hillside town of San Gimignano and their perfumed dergs, the skins separated from the must of the famous Vernaccia di San Gimignano DOCG, are sent still full of sweet juice to a famous distiller located in the heart of ancient Tuscany where, after completing the fermentation of the residual sugars in alcohol, they are transformed into this precious Grappa di Vernaccia.
Grape variety: Vernaccia di San Gimignano
Distilling method: The dergs are alembicated in a current of steam following the double distilling method; the master distiller carefully eliminates the components of the head and tail, in order to obtain only the heart of the distillation process.
The copper used in the construction of the alembic and the peculiar method of workmanship fully enhance the scented characteristics of the dergs in the grappa.
Ageing: about three months in stainless steel
Alcohol content: 45° minimum
Visual analysis: Crystal clear transparency with varying color hues
Olfactory analysis: Its bouquet is delicately floral and fascinating for its harmony and simplicity.
Tasting analysis: pleasantly smooth and lacking sharp edges
Retro nasal analysis: elegant and discrete persistency with light notes of sweet spices which enhance its natural freshness.
Serving temperature: 9°- 11° C
Suggested serving glass: long stem tulip shaped crystal glass
